AVB Aromazyme is food-grade enzyme preparation with a strong glycosidase activity derived from selected strain of Aspergillus niger. I tis composed of β-gkucosidase enzymes that are capable of hydrolising glycosidic bonds and liberating monoterpene alcohol compounds and glucose. It has been develop to increase hop aroma and flavour profile in beer.
Aromazyme is dosed during fermentation, dilute the enzyme in water / 1g in 10 ml / to ensure even distribution, recommended dosage is 5 g /1 hl.
Aromazyme has optimal activity between pH 3.5-6.5, optimal temperature range is 15-65°C.
Aromazyme is available in 100 g sealed plastic jars, we recommend storage up to 5°C.
